A campesino and his burro bring maguey (agave) plants up the hill as part of a habitat improvement project to support populations of insects used as food and a source of income. This photo was taken on July 2, 2013 in the municipio of Santiago de Anaya, Hidalgo, Mexico. Several insect species that use maguey as food and/or nest sites have seen populations decline as overharvesting of both the insects and the magueys have increased in recent years. Once seen as "peasant foods" eaten by the indigenous Hñahñu (Otomi) peoples, chiniquiles, escamoles, and chicharras are now sought by high-end restaurants in the cities. Meanwhile, the magueys are harvested for a variety of uses, especially in the preparation of "barbacoa", roasted sheep, a regional specialty. This habitat improvement project was coupled with educational presentation and materials promoting sustainable harvesting and knowledge of the insect life cycles.
