A traditional dish from the Sierra of Perú, Pachamanca is the Peruvian equivalent of cookout food. It usually consists of meat (chicken, lamb, pig, beef, or guinea pig), along with potatoes, sweet potatoes, a sweet tamal, a savory tamal, and java beans, which are usually cooked in a temporary, underground stone oven with lots of tasty seasonings.
