I took this photo in late June 2013 during a mango drying training in Senegal. Pout is located in one of the most prominent mango-producing hubs for both the domestic market and for exporters, yet every year at least 30% of the harvest is lost to spoilage. The photo shows a local association applying new transformation training, placing sliced mangoes into a hybrid solar-gas dryer. 24 hours later, this process yields hygienic and high quality dried mangoes--improving the community's income generation as well as its food security.
