Fall is my favorite time in Macedonia. Not only can you buy red peppers by the kilo for practically nothing, all the locals are making ajvar. One of the key processes to making ajvar is roasting red peppers. Locals are roasting red peppers all over town on small outdoor wood fired stovetops and the smell is amazing This photo was taken at a market in Fall of 2008.
